Over the years so called ‘ping’ meals have gotten a bad reputation with the health conscious, the shopping savvy and the wannabe chefs out there. But yes, whilst the majority of ‘ready meals’ on the market are filled to the brim with chemicals and preservatives, homemade alternatives can be just as healthy (if not more so) than their hob or oven cooked counter parts.
I love that at work we have a Panasonic microwave oven to help us stay happy and healthy in the office, more and more companies are opening up to employee welfare and making little provisions such as a microwave go a long way.
Most days at work I will make use of the microwave and prepare myself a nice ‘stir-fry’. I simply microwave around 150g of mixed vegetables, some chicken or turkey and add to this some grains, pulses or nuts and within 5 minutes I have a nice, piping hot and healthy lunch in front of me.
Oh and don’t even get me started on Protein Mug Cakes because those bad-boys are the best!
But would you believe that this Frittata was actually born in a microwave too? Oh how you haven’t lived!
Frittata’s are an a quick an easy fix in the microwave and for this one all you will need is;
- 3 Medium Free Range Eggs
- 20g Goats Cheese
- 1/2 Tsp Coconut Oil
- Handful of Spinach
- A Drizzle of Honey
Simply whisk your eggs together in a bowl until light and almost fluffy (not too light, no clouds here thank you), mix in the Goats Cheese (I find that the soft type works best) along with the Coconut Oil, Spinach and a drizzle of Honey.
Microwave on full power for 2-3 minutes (I use short 30 second bursts and check in between to avoid overcooking) and when firm, serve with a nice bit of crusty bread with butter!
Too many people think that eating well at the office is hard work, and its only hard work if you make it hard work. Keep it simple, use single ingredients, prep at home if you need to because so long as you have a microwave in your life, you really have no excuse!
