My Healthy Chicken Curry

Evening everyone! This year I wanted to do something a little bit different on Harmony Blaze and start to introduce a few new features now that the site is fully up and running. Introducing my very own YouTube channel and first up a hearty, healthy recipe for you to try out.

For this recipe you will need;

2 Teaspoons Coconut Oil

2 Chicken Breasts, Diced 

2 Tomatoes, Chopped into Quarters

1 Red Onion, Finely Chopped

2 Peppers, Sliced

2 Handfuls of Roughly Chopped Spinach

2 Heaped Dessert Spoons Low Fat Greek Yoghurt

1 Carton Sainsburys Chopped Tomatoes (390g)

Turmeric, Garam Masala, Paprika & Chilli Powder (to taste)

1 Pinch of Salt & Pepper

First of all pre-heat a large saucepan over a medium heat before adding your coconut oil. Once melted add in your diced chicken and fry until it begins to brown before adding in your onions & tomatoes. As these begin to soften, add the spinach and peppers. 

Leave the mixture to simmer for around 10 minutes and season with a pinch of salt and pepper before stirring in the carton of tomatoes and the greek yoghurt. This will need to simmer for around another 20 minutes (until the sources reduces and thickens), you will need to stir regularly and add in the spices. 

Depending on your own taste, you may just want to add a dash of each of the Paprika, Garam Masala & Turmeric and leave out the Chilli powder. However, I find that a teaspoon of Garam Masala, half a teaspoon of the Turmeric & Paprika and a healthy dash of Chilli powder tastes fantastic. Really full of flavour, not too over-powering and not too spicy.

Thee curry will sort itself from this point and I serve with Wholegrain rice and (on this occasion) Naan bread. 

This recipe will make 2-3 servings and takes less than an hour including preparation and cooking so it is perfect when you get in from work and want something tasty and simple.
