Staying in really is the new going out if you ask me. Gone are the days where I lived for the weekend just so that I could don a pretty party dress and hit the dance floor, nowadays I would much prefer to chill on the sofa with my nearest and dearest instead.
However, staying in raises the big question of snacks!
As lovely as good old Doritos and Pringles are, I love to cook up something a little more adventurous occasionally and these little wedges are truly delightful.
Simply take 1 medium potato per person (this recipe works for both Sweet Potatoes and the old fashioned kind too) and keeping the skins on slice into chunky wedges. Preheat the oven to around 200 degrees and place the wedges on a baking tray with a teaspoon of Coconut Oil.
Whilst your potato is in the oven take around 30 grams of Goats Cheese per person and dice into cubes and pop to one side.
Cooking times can vary dependent upon your interpretation of the term ‘chunky’ but mine usually take around 30 minutes. Keep tossing them every few minutes or so to ensure they don’t stick and go a delicious golden brown colour.
Make sure you pop the wedges straight into a bowl once ready as you you will need the heat from them to melt the diced Goats Cheese a little. Simply sprinkle the cubes over the wedges along with a few teaspoons of pomegranate seeds.
Your wedges are now ready to serve and they take very little time, effort or money to make and will put a smile on all of your guests faces.
